Cinnamon Pumpkin Dip

There are very few Holiday recipes that are light and fluffy so I wanted to share this delicious dip recipe with you.  You can pair with healthy snacks such as animal crackers, apple, graham crackers or pretzels.  This cinnamon pumpkin dip is the perfect treat for a holiday party. It tastes like pumpkin pie without the carbs!

Ingredients 
15 oz can pumpkin
3/4 cup brown sugar
1 tsp vanilla
1/8 tsp cinnamon
1/8 tsp pumpkin pie spice
6 oz fat free Greek yogurt (I used Chiobani)
8 oz cool whip free
Directions
Mix pumpkin with brown sugar, vanilla and spices, blend well. Mix in yogurt. Fold in cool whip and chill in refrigerator until ready to eat.
Makes about 6 cups

Snapshots #OOTD


Last week was all about layers and these boots which go with everyyything. Layers were essential because some days reaches high 60s and then the evening would drop 20 or so degrees.  My favorite look was Monday's corduroy mustard skirt and cardigan and most comfy was the plaid & AEO baggy pants, which were as comfy as sweatpants!  I did not get Wednesday's look but did snap a shot of Tuesday's layered--really shoes how a cardigan can change up an entire outfit.

Winter Wonderland Bridal Featured on Popsugar

Crockpot Butternut Squash Soup




It's soup season and my crock pot is my best friend this winter, especially with having no time to cook after work since Gavin likes to be help from the second I walk in the door until bedtime.  I'm not complaining, but it does make it super hard to prep dinner with one hand (although that has been done too).  I love fall flavors and butternut squash is one of my favorites for soups. 




  • 1 butternut squash, chopped & seeded into 1/4 inch cubes
  • 1 onion, chopped
  • 2 cups chicken broth
  • 2 garlic cloves
  • 3/4 cup almond milk
  • 1/2 tsp nutmeg
Place squash, onion, garlic,  1 cup of chicken broth and butter in a slow cooker, and cook on high for about 4 hours.
Using a blender, puree until smooth.  Return to crockpot and add remaining chicken broth, almond milk, & nutmeg.  Cook for about 30 more minutes, or until soup is heated through.  Sprinkle with cinnamon for garnishing.

Damsel in Distressed Jeans

Usually by now, my open toe shoes are packed away until end of April but because the weather has been seasonably warm, I have been sneaking in my final days of open-toe shoes.  When I was shopping at Nordstrom. I had to try on these high-waited skinny jeans for two reason. 1. I needed a pair of mom jeans to control my post-partum pooch and 2. The style name is JAMIE.  So basically, they were made for me & totally fit like they were, too!

Series: Friday Faves

Friday Faves is a light-hearted series of my weekly favorite photos, recipe, and moments that do not make it to my Instagram or a full blog posts, but are definitely share-worthy.  Like this amazing Greek pizza recipe that came out to be an amazing last-minute dinner this week when I had some spontaneous company.


1. Greek pizza for some mid-week flavor. Recipe from Art is the Handmaid of Good.
2. Baked butternut squash; my favorite fall side dish.  I sprinkled with a little cinnamon and is heaven.
3. Jingles really does have the life.  I am envious of her several cat naps, especially since Gavin has been restless this entire week, leaving one tired Mama!
4. These handmade earrings by local CT designer, Halcyon Artistry.

Easy Apple Pie Bites

Nothing replaces homemade apple pit but when time is not on your side (which it has not been on mine lately), it's important to have some shortcuts on your hand just in case you need to make something for a gathering in just a few minutes.  I always keep Pillsbury Crescents on hand because you can make basically anything with them.  I have done pizza rolls, nutella rolls, mini sandwiches and so much more.  Since I had so many apples from my apple picking adventure, I made these tasty apple pie bites.  So easy & perfect for a quick fall dessert.  What is your favorite go-to easy dessert?


 Ingredients:
  • 1 large apple, peeled & chopped into small pieces
  • 2 teaspoons Cinnamon
  • 2 tablespoons butter, melted
  • 1/3 cup brown sugar or coconut palm sugar (I used coconut palm sugar)
  • 1 can 8 oz Pillsbury Crescents
Directions: Pre-heat oven to 375°  & grease cookie sheet with oil.  In a small bowl, mix apple slices, cinnamon, melted butter and sugar to make "Apple pie filling."  Separate crescents and roll in "apple pie filling." Bake for 8-10 minutes.  Sprinkle with cinnamon & enjoy.  Serve warm.

Scalloped Skirt

Since I was on maternity leave all summer, most of my summer outfits consisted of nursing tanks, casual shorts, and flip flops. Since I returned to work mid-September, I made sure to break out all of my favorite summer ensembles so that would get some use this year.  This week is in the 70's so it is my last chance to break out my warmer-weather pieces before the chilly weather comes.  As most of you know, I am a huge fan of Topshop, as a Topshop Ambassador, so I fell in love with this scalloped-hem mini skirt  and paired it with a simple crop top and my go-to metallic heels.

Traditions

   As many of you know, I launched Jamie Ever After in a way to encompass my new growing family in my life as well as continue to share my story as a Mom, wife, fashion-lover, and crock-pot enthusiast. Now that everything is centered around Gavin, Holidays will surely be different this year and I am so excited to start some new traditions with my little man.
   Yesterday was Gavin's first Halloween.  We had my in-laws come over and help pass out candy while we went around the houses and showed off his little duck costume.   Since I come from a large extended family, my family is, and has always been, all about hand-me-downs.  Gavin's costume came from his big cousin Breylan and he is the third kid in our family to rock it on Halloween!
   Some of my fondest childhood memories come from the traditions my family practiced during holidays.  I want to not only pass on some favorite traditions from childhood, but create new family traditions with him as a family.
   For Christmas, I remember always falling asleep at Christmas Eve's midnight mass, and Easter dressing up and getting our kielbasa and egg-filled Easter baskets blessed at the Polish church in New Britain.
